If you have shopped for ghee recently, you have probably seen the terms A1 and A2 on the label — and wondered what the real difference is. It is one of the most common questions we hear, and the answer comes down to a single protein. Here is everything you need to know about A1 vs A2 ghee.
It starts with the milk, not the ghee
The difference between A1 and A2 ghee is decided long before churning ever begins — it is in the milk itself. Cow's milk contains a protein called beta-casein, and it comes in two main types:
- A1 beta-casein — found in the milk of most high-yield, hybrid and foreign cattle breeds (like Holstein Friesian and Jersey).
- A2 beta-casein — found in the milk of native Indian desi cows, such as Gir, Sahiwal and Red Sindhi.
When A1 milk is digested, it releases a peptide called BCM-7, which many people find harder on the stomach. A2 milk does not produce it in the same way — which is why A2 dairy is traditionally considered gentler and easier to digest.
So what does that mean for ghee?
A2 ghee is made only from the milk of indigenous A2 desi cows. A1 ghee (or unlabelled commercial ghee) is usually made from mixed or hybrid-breed milk. While both are technically ghee, the source — and the care taken to make it — is what sets them apart:
- Digestibility — A2 ghee is widely regarded as easier on digestion.
- Tradition — true A2 ghee is made the slow Bilona way (milk to curd to hand-churned butter to slow-cooked ghee), not by directly boiling cream.
- Purity — A2 ghee from a trusted source has a richer golden colour, a natural nutty aroma and no shortcuts.
How to be sure you are getting real A2 ghee
The label A2 only matters if the milk genuinely comes from desi cows and the ghee is made traditionally. Look for ghee that names the breed, uses the Bilona method and comes from a brand that sources directly from farmers — so you can trust what is really in the jar.
