The simple science of crystallisation
Honey is a natural, super-saturated solution of two main sugars β glucose and fructose β held in a small amount of water. Over time, the glucose naturally separates out of the liquid and forms tiny crystals. This is a completely natural physical process. The honey has not spoiled, fermented or changed in quality β it has simply changed form.
Why pure honey crystallises (and fake honey often does not)
Raw, unprocessed honey is full of natural pollen and tiny particles that give those glucose crystals something to form around β so it sets faster. Heavily processed or adulterated honey, on the other hand, is heated and ultra-filtered, which removes the pollen and slows crystallisation. Honey cut with sugar syrup may never crystallise at all. So if your honey sets, that is a good sign.

Does crystallised honey still taste good?

How to turn crystallised honey back to liquid
- Place the jar in a bowl of warm (not boiling) water and stir gently until it liquefies.
